Caviar Potato Chips

This is the perfect appetizer for a special occasion.

To be clear, caviar is not on a regular rotation in our house, but I do make a point to make this bite, adapted from Melissa Clark on New York Times Cooking, every year for New Year’s Eve. The bite is so decadent, yet simple at the same time. As far as the caviar goes, buy the best you can afford.

Serves 6

  • potato chips

  • creme fraiche or sour cream

  • 1 jalapeno, very thinly sliced

  • caviar of choice

  • 1 lemon, cheeked

  • chives, chopped

Top each potato chip with a small dollop of creme fraiche, thin slice of jalapeno, spoonful of caviar, little squeeze of lemon juice and sprinkling of chives.
